Bacon & Mustard Fried Cabbage

- 1 head cabbage green
- 1 large onion diced
- 4 cloves garlic minced
- 1/2 tsp. smoked paprika
- 2 tbsp spicy, stone-ground, or dijon mustard
- salt and pepper to taste
In a large pot fry bacon over medium heat until crispy and remove with a slotted spoon to a glass bowl.
Add diced onion to the bacon drippings and cook until translucent.
Add the garlic, mustard, and seasonings and cook for one minute.
Place the cabbage in the pot and stir carefully, it goes everywhere!
Cook for 5-10 minutes until the cabbage reaches desired softness.
Add the bacon back to the pot and stir together. Enjoy!
