Amazing Bacon & Mustard Fried Cabbage

This Bacon and Mustard Fried Cabbage may not look like much, but let me tell you, it is a party in your mouth! I mean, it starts with beautifully crispy smoked bacon so you know it can’t be bad. BUT… then you add the mustard and the magic really happens. We used spicy mustard but I know your favorite Dijon mustard will also bring applause.

Bacon & Mustard Fried Cabbage

This is a great GREEN side dish to serve on New Year’s Day with your Black-Eyed Peas and Ham. We also love to serve it with our favorite Hoppin’ John. Green represents American currency and is said to bring luck and prosperity. I get can down with that!

SIMPLE INGREDIENTS FOR BACON & MUSTARD FRIED CABBAGE:

  • 1 head of green cabbage, chopped
  • 1/2 lb. smoked bacon cut into 1-inch pieces
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 Tbsp. Spicy Mustard or Dijon
  • 1/2 tsp. smoked paprika
  • salt & pepper to taste

LET’S GET FRYING:

You will want to start with a big pot. Don’t be like me and start with a skillet and realize when you add the cabbage that you will need something much bigger. The cabbage wilts down nicely but it starts out BIG! Fry the bacon in the pan until crispy and remove with a slotted spoon to a glass bowl or plate. You want to use glass because plastic can be melted with hot grease. We like to cut the bacon with kitchen shears right into the pot.

PRO TIP:

My best tip for frying bacon is to keep the temperature down to medium. If you get it too hot it is easy to burn before it is all cooked. Another tip is if you keep bacon in the freezer you can cut it with a sharp knife on a cutting board and throw the strips into the pot and begin frying from frozen. You definitely want to keep the temp low for this so it can defrost and all those pieces will separate. (This is an entire pound of bacon, we used half for another recipe.)

Once you’ve removed the bacon from the pan you can add the diced onion to the bacon drippings. Cook for several minutes until the onion becomes translucent, then add the garlic, seasonings, and mustard. Add the chopped cabbage and stir it all together. We think it’s easiest to cut the cabbage into strips and then chop in the opposite direction.

FINISHING TOUCHES:

Cook the cabbage over medium heat until it is soft then add that beautiful bacon back to the pot.

This really is such a deliciously flavorful side dish and it is even better the next day! My husband loves cabbage and is a big fan of this Bacon & Mustard Fried Cabbage.

Ingredients
  

  • 1 head cabbage green
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1/2 tsp. smoked paprika
  • 2 tbsp spicy, stone-ground, or dijon mustard
  • salt and pepper to taste

Instructions
 

  • In a large pot fry bacon over medium heat until crispy and remove with a slotted spoon to a glass bowl.
  • Add diced onion to the bacon drippings and cook until translucent.
  • Add the garlic, mustard, and seasonings and cook for one minute.
  • Place the cabbage in the pot and stir carefully, it goes everywhere!
  • Cook for 5-10 minutes until the cabbage reaches desired softness.
  • Add the bacon back to the pot and stir together. Enjoy!
