INSTANT POT Mashed Potatoes

I’m sure if you have an Instant Pot, you have seen LOTS of recipes for Instant Pot Mashed Potatoes, but we thought we would share ours with you and let you in on our secret ingredient!

To make Instant Pot Mashed Potatoes you will need:

  • 5 lbs potatoes, peeled and cubed, we used russet but prefer yukon gold
  • 1 stick butter, 8 Tbsp.
  • 1/4 to 1/2 Cup cream or milk
  • 2 Tbsp. mayonnaise
  • salt and pepper to taste

That’s right! We add MAYO to our mashed potatoes. It makes them rich and creamy and is just how my Grandma Mildred does it. We asked her why she adds the mayo and she says because she likes it. There ya go. Grandma likes it and so do we! Give it a try sometime.

Let’s get cookin’:

Start by placing your stick of butter, cream (or milk) and mayonnaise in a bowl so they will be at room temperature when you are ready for them.

Scrub about 5 pounds of potatoes. I never measure this. Just a good amount of taters.

Go ahead and peel them and remove any bad spots they may have. We got these beautiful potatoes when my brother in law and sister in law brought back a bunch from a trip to Idaho. They are big and fresh which I knew because they were covered in dirt! Not like you get at the grocery store. 

Now cube them and add them to the Instant Pot liner along with a little salt and 2 cups of water.

Under Pressure:

Close the lid on the Instant Pot and make sure the valve is set to sealing. Set the Instant Pot on high pressure for 8 minutes. It will take some time to get up to pressure and then it will count down from 8. When the timer beeps carefully turn the valve on top to venting to release the pressure. Once the pressure is fully released the pin on the lid will drop and you can carefully open the lid. I always open the lid away from me so the steam doesn’t go right in my face. Drain off any remaining liquid and add the potatoes to a mixer or bowl. We used our Kitchen Aid for this but you could also use a hand mixer or potato masher.

The good stuff:

Dump the cream, butter, and mayonnaise on top.

Mix on low speed until no lumps remain. The potatoes should be pretty soft so it won’t take long at all. You DO NOT want to over mix them or they will become gummy.  Add salt and pepper to taste and serve warm. We sprinkled some chopped chives on top so they were purdy.

These Instant Pot Mashed Potatoes are so creamy and delicious. They cook for just 8 minutes. The addition of mayonnaise makes them extra rich and creamy.
Ingredients
  • 5 lbs. potatoes, peeled and cubed
  • 1 stick butter, 8 Tbsp.
  • 2 Tbsp. mayonnaise
  • ¼ to ½ cups heavy cream or milk
  • 2 cups of water
  • salt and pepper to taste
Instructions
  1. Place butter, mayo, and cream in a bowl to get to room temperature.
  2. Wash, peel and cut potatoes into large cubes.
  3. Add 2 cups water to the liner of your Instant Pot or another pressure cooker.
  4. Add potatoes to the pot.
  5. Close lid and turn valve to sealing.
  6. Set Instant Pot to high pressure for 8 minutes.
  7. Quick-release the pressure when time is up by carefully turning the valve to venting.
  8. Open the lid and drain any remaining liquid.
  9. Add potatoes to a bowl or mixer.
  10. Add the cream, mayo, and butter on top of the potatoes.
  11. Mix until no lumps remain, do not over mix.
  12. Salt and pepper to taste.
  13. Serve warm.
