Y’all are going to LOVE this recipe for Grandma Mildred’s Summer Pecan Pie. I was looking through her cookbook and came across this and told my Dad I had never had it before and couldn’t picture what it was like. He got really excited and told me it is wonderful, so my Mom and I went straight to the kitchen and whipped up a couple.
Jump to RecipeOh. My. Word. It was so easy to make and is seriously yummy and addictive. This recipe calls for just FIVE ingredients. It doesn’t get much easier than that!
Ingredients for Grandma Mildred’s Summer Pecan Pie:
- 3 egg whites
- 1 cup sugar
- 1 tsp. vanilla
- 20 Ritz crackers, crushed
- 1 cup pecans, chopped
Yes, you read that correctly, one of the 5 ingredients is Ritz Crackers! Interesting…
LET’S MAKE IT:
Add your egg whites to a bowl and beat with a hand mixer, or this could be done in a stand mixer as well.
Add a half cup of the sugar and the vanilla as you beat the egg whites.
It’s good to go once you have stiff peaks.
Count 20 Ritz crackers and add to a Ziploc bag and crush.
Now roughly chop up the pecans.
Add the pecans to the remaining sugar in a bowl and mix in the crackers.
Time to gently fold the pecan and cracker mixture into the egg white mixture.
Spread into a lightly greased pie plate.
Bake at 350 degrees for 25-28 minutes until just lightly browned.
So simple and delicious!!
Grandma Mildred’s Summer Pecan Pie is technically a crustless pie, but after it bakes there is magically a crunchy crust on the top and bottom.
The middle is chewy and full of pecans.

- Hand or stand mixer
Ingredients
- 3 egg whites
- 1 cup sugar
- 20 Ritz crackers crushed
- 1 cup pecans chopped
- 1 tsp vanilla
Instructions
- Beat the egg whites with half of the sugar and the vanilla until stiff peaks form.
- Combine remaining sugar, chopped nuts, and crushed crackers.
- Gently fold in the egg whites.
- Spread evenly in a lightly greased pie plate.
- Bake at 350 degrees for 25 to 28 minutes until lightly brown.
