Grandma Mildred's Summer Pecan Pie

A simple crustless pecan pie recipe with just 5 ingredients. Crunchy on the outside and chewy and full of nuts in the middle.

Ingredients
  

  • 3 egg whites
  • 1 cup sugar
  • 20 Ritz crackers crushed
  • 1 cup pecans chopped
  • 1 tsp vanilla

Instructions
 

  • Beat the egg whites with half of the sugar and the vanilla until stiff peaks form.
  • Combine remaining sugar, chopped nuts, and crushed crackers.
  • Gently fold in the egg whites.
  • Spread evenly in a lightly greased pie plate.
  • Bake at 350 degrees for 25 to 28 minutes until lightly brown.
