Grandma Mildred's Summer Pecan Pie
A simple crustless pecan pie recipe with just 5 ingredients. Crunchy on the outside and chewy and full of nuts in the middle.

- 3 egg whites
- 1 cup sugar
- 20 Ritz crackers crushed
- 1 cup pecans chopped
- 1 tsp vanilla
Beat the egg whites with half of the sugar and the vanilla until stiff peaks form.
Combine remaining sugar, chopped nuts, and crushed crackers.
Gently fold in the egg whites.
Spread evenly in a lightly greased pie plate.
Bake at 350 degrees for 25 to 28 minutes until lightly brown.
