You would think there would be a limit to my love for Cadbury Mini Eggs, but nope! The best news is that my hubby doesn’t care for them so there’s more for me! I’ve just got to keep those pesky kids away. These Cadbury Mini Eggs Chocolate Cookies are the best!
The base recipe for these Cadbury Mini Eggs Chocolate Cookies is adapted from Grandma Coco’s Chocolate Chip Cookies. Some of the flour is replaced with cocoa and we used the Cadbury Mini Eggs in place of the chocolate chips. They are chocolate perfection with a little bit of crunch. Nom…nom…nom…
What you will need to make our Cadbury Mini Eggs Chocolate Cookies:
- 1 stick butter, softened (half cup)
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp vanilla
- 1/2 tsp. salt
- 1/4 cup cocoa, we use Dutch cocoa
- 1 1/2 to 1 3/4 cups flour
- 1 cup Cadbury Mini Eggs, broken
Let’s get mixing:
Start by placing your butter and sugars in a bowl and cream together. You can also use a stand mixer if you would like.
Next, add the egg.
Stir until smooth.
Add baking soda, baking powder, salt, and vanilla.
Chocolate time:
Stir together and then add the cocoa.
Mix again making sure to remove any lumps.
Add one cup of the flour.
Stir it together again. Put 1/2 cup flour onto a clean surface and dump the cookie dough on top of it.
Mix with your hands and add the remaining 1/4 cup of flour if needed.
Time for the special ingredient:
You don’t want it to be too sticky or too dry. When the flour is incorporated add the broken Cadbury Mini Eggs.
We put ours in a sandwich bag and used the back of a spoon to smack them and break them up. Perfect job for the kids…or Mom who needs to get out a little frustration! 🙂
Mix the dough by hand until the candies are incorporated throughout. I like to leave some of them out to put on top of each cookie before I bake.
Now roll the dough out into a long log. Or, if you don’t have enough space, split the dough in half and do two logs.
Now slice into 24 pieces with a knife. I start by slicing it in half, then in half again, and in half one more time. You should have 8 even pieces by now. Cut those into thirds. Mathing is hard. 🙂
Okay, you caught me! Some of mine weren’t exactly even…so we sampled a little cookie dough.
Time to bake:
Place the dough on an un-greased cookie sheet. If you want, go ahead and top them with a few big chunks of broken Cadbury Mini Eggs.
Bake at 375 degrees for 9 minutes.
So chocolatey and delicious!
Keep these cookies in mind when all that Easter candy goes on sale! It used to be that you had to wait all year for these Cadbury Mini Eggs to hit the shelves, but they have wised up and now have Cadbury Fall and Christmas mixes. They are ball-shaped instead of eggs, but we’re not complaining!

- Sprinkle 1/2 cup of flour onto a clean surface and turn dough out onto it.
- Mix by hand until the flour is incorporated. Add the remaining 1/4 cup of flour as needed. Dough should not be too sticky or too dry.
- Add the broken Cadbury Mini Eggs and mix together.
- Roll into a log and slice into 24 pieces.
- Place dough on an un-greased cookie sheets and top with extra Cadbury Egg pieces if desired.
- Bake at 375 degrees for 9 minutes.
