Bursting Blueberry Salsa: Quick and Fresh

We have been eating SO MANY BLUEBERRIES and I’m not mad about it at all. We went to a blueberry farm in Northern Idaho and picked over 10 pounds of blueberries. They are so bright and flavorful. We’ve been making LOTS of yummy recipes, but this simple Blueberry Salsa may be my favorite. It is quick to throw together and the flavor is amazing.

What you’ll need to make this Bursting Blueberry Salsa:

  • 1-2 jalapenos
  • 2 cups fresh blueberries
  • 6 fresh strawberries
  • 1/2 cup cilantro
  • zest and juice of one lime
  • salt and pepper to taste

Super simple, right?! You’ll be in blueberry salsa heaven in no time!

LET’S GET CHOPPIN’:

Okay, there are lots of ways you can make this simple salsa. If a knife and cutting board are all the tools you have, that’s enough! We chose to use our manual food processor from Pampered Chef and did it in batches. You could also use an electric food processor, just make sure not to over-process into sauce.

Start by slicing, and de-seeding your jalapeno. If you use just one jalapeno, it will be a very mild salsa. My kids like it mild, but I prefer a little more heat and use two jalapenos. Chop the jalapenos or place them in a food processor and pulse a few times until you get your desired consistency.

Next, we added the strawberries with the lime zest and juice, and mix until chopped up.

Lastly, we chopped up the blueberries and cilantro!

Add them all together in a bowl, sprinkled with salt and pepper, and mix together.

Serve with tortilla chips, over grilled chicken, or grab a spoon and dig in! Our favorite tortilla chips are Santitos Cilantro Lime. They are so yummy!

Bursting Blueberry Salsa

Fresh blueberries and strawberries, cilantro, lime, and jalapeno. Perfect mix of sweet and heat.
Course Snack

Ingredients
  

  • 1 cup fresh blueberries washed and sorted
  • 1-2 jalapenos seeded and sliced
  • 6-8 strawberries hulled
  • 1/2 cup cilantro without stems
  • 1 lime zest and juice
  • salt and pepper to taste

Instructions
 

  • In a food processor, or with a knife, chop jalapeno, strawberries, blueberries, and cilantro and place in a bowl.
  • Add juice and zest of one lime and salt and pepper to taste.
  • Refrigerate salsa for one hour to allow flavors to meld.
  • Best served the same day, but will keep up to 3 days in the refrigerator.
  • Serve with tortilla chips, on top of your favorite chicken, or eat with a spoon!
