Berry Spinach Pasta Salad with Creamy Poppy Seed Dressing

This Berry Spinach Pasta Salad with Creamy Poppy Seed Dressing is SO yummy and beautiful, if I do say so myself. It is FULL of amazing flavors and textures. You will need a BIG bowl for this salad as it is perfect for potlucks or a big family. Feel free to half the recipe if you like.

Berry Spinach Pasta Salad with Creamy Poppy Seed Dressing

To make Berry Spinach Pasta Salad you will need:

  • 1 lb. penne pasta, cooked al dente
  • 6 oz. baby spinach, about 2 cups
  • 1 cup blueberries
  • 1 cup pepitas
  • 2 cups sliced strawberries
  • 1 cup Feta cheese
  • 1 cup red onion, sliced
  • 1 cup dried cranberries

Start by washing your fruit, and slicing the strawberries and the onion.

PUTTING IT TOGETHER:

In your BIG bowl put the pasta at the bottom and top with the spinach. Next arrange the rest of the ingredients in stripes so it looks like a tasty rainbow. I started with the strawberries in the center and worked my way out. There is no real wrong or way to do it, you could even make a bulls eye if you want! The stripes sure are pretty though.

To make the Creamy Poppy Seed Dressing you will need:

  • 1 cup mayonnaise, I prefer Hellman’s brand
  • 1/4 cup each: sugar, cider vinegar, milk, and sour cream
  • 1 tsp. dry mustard
  • 1.5 Tbsp. Poppy Seeds

You can just put all the dressing ingredients in a jar with a lid and shake it, or use the blender. This makes about 2 cups of dressing. Reserve the dressing until ready to serve. I like to pour about half of the dressing on the salad and stir it up and reserve the rest on the side for people that may want more dressing. Pasta tends to soak up the dressing so it’s nice to have some dressing for left overs as well.

STIR IT UP AND ENJOY!

It is just as beautiful when you stir it all up and you can use any pasta you like for this. We have done both Penne and Bowtie pasta for this recipe. The bowtie pasta looks great in this salad.

Ingredients
  

  • 1 lb. penne pasta cooked al dente and cooled
  • 6 oz. baby spinach about 2 cups
  • 2 cups strawberries sliced
  • 1 cup blueberries
  • 1 cup pepitas
  • 1 cup Feta cheese
  • 1 cup red onion sliced
  • 1 cup dried cranberries

Creamy Poppy Seed Dressing

  • 1 cup mayonnaise
  • 1/4 cup cider vinegar
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1/4 cup sugar
  • 1 tsp. dry mustard
  • 1.5 tbsp. poppy seeds

Instructions
 

  • In a large bowl, add the cooked and cooled pasta.
  • Top with the baby spinach.
  • Start with the strawberries and make a stripe down the middle of the bowl on top of the spinach.
  • Add all other salad ingredients in stripes to fill the bowl.

For the dressing add all ingredients to a jar with a lid and shake to combine.

  • Chill dressing and salad until ready to serve. When ready to serve, toss the salad with about half the dressing. Reserve remaining dressing and serve on the side.
