Berry Spinach Pasta Salad with Creamy Poppy Seed Dressing

This salad is FULL of yummy flavors and textures. The creamy dressing is sweet and tangy and brings it all together.

- 1 lb. penne pasta cooked al dente and cooled
- 6 oz. baby spinach about 2 cups
- 2 cups strawberries sliced
- 1 cup blueberries
- 1 cup pepitas
- 1 cup Feta cheese
- 1 cup red onion sliced
- 1 cup dried cranberries
Creamy Poppy Seed Dressing
- 1 cup mayonnaise
- 1/4 cup cider vinegar
- 1/4 cup milk
- 1/4 cup sour cream
- 1/4 cup sugar
- 1 tsp. dry mustard
- 1.5 tbsp. poppy seeds
In a large bowl, add the cooked and cooled pasta.
Top with the baby spinach.
Start with the strawberries and make a stripe down the middle of the bowl on top of the spinach.
Add all other salad ingredients in stripes to fill the bowl.
For the dressing add all ingredients to a jar with a lid and shake to combine.
