Ultimate Cowboy Queso Dip

Ground beef, 3 cheeses, and lots of flavor, this Cowboy Queso has it all!

Ingredients
  

  • 1/2 pound ground beef
  • 1 tsp. cumin
  • red pepper flakes optional
  • 1/2 red onion diced
  • 1 can Rotel tomatoes and green chilis mild, regular, or hot depending on preference
  • 16 oz. Velveeta cheese
  • 8 oz. pepper jack cheese shredded
  • 8 oz. cream cheese
  • 1 can black beans drained and rinsed
  • 1 can whole kernel corn drained
  • 1/4 cup cilantro

Instructions
 

  • Brown ground beef in a large pan over medium high heat.
  • Once the beef is almost brown, add the diced onion, cumin, and red pepper flakes.
  • Pour in the beef broth and deglaze the pan, then add the can of rotel.
  • Turn the burner to low and allow it to simmer while you get the cheeses ready.
  • Add the cheese to the meat mixture and stir occasionally until fully melted.
  • Stir in the corn and black beans and continue to cook until heated through.
  • Garnish with cilantro and serve warm with tortilla or corn chips.
