Brown ground beef in a large pan over medium high heat.
Once the beef is almost brown, add the diced onion, cumin, and red pepper flakes.
Pour in the beef broth and deglaze the pan, then add the can of rotel.
Turn the burner to low and allow it to simmer while you get the cheeses ready.
Add the cheese to the meat mixture and stir occasionally until fully melted.
Stir in the corn and black beans and continue to cook until heated through.
Garnish with cilantro and serve warm with tortilla or corn chips.
