Mexican Wedding Cookies
Buttery, nutty, crumbly, melt-in-your-mouth cookies rolled in powdered sugar.

- 2 sticks butter room temperature, 1 cup, we use salted
- 1/2 cup powdered sugar
- 2 tsp vanilla
- 1/2 tsp salt
- 3/4 cup pecans finely chopped
- 2 cups flour
- 1 cup powdered sugar for rolling cookies in
Cream together butter and 1/2 cup powdered sugar until light and fluffy.
Mix in the chopped pecans, salt, and vanilla.
Add the flour and mix until just incorporated.
Cover and refirgerate dough for 1 to 2 hours.
Scoop dough into 1 1/2 inch balls, about 2 tbsp. each.
Roll each dough ball in powdered sugar before placing them on the cookie sheet.
Bake at 375 degrees Fahrenheit for 12-14 minutes until set but not browned.
When cool, roll cookies in powdered sugar again.
Store in an air-tight container.
