Mexican Wedding Cookies

Buttery, nutty, crumbly, melt-in-your-mouth cookies rolled in powdered sugar.

Ingredients
  

  • 2 sticks butter room temperature, 1 cup, we use salted
  • 1/2 cup powdered sugar
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 3/4 cup pecans finely chopped
  • 2 cups flour
  • 1 cup powdered sugar for rolling cookies in

Method
 

  1. Cream together butter and 1/2 cup powdered sugar until light and fluffy.
  2. Mix in the chopped pecans, salt, and vanilla.
  3. Add the flour and mix until just incorporated.
  4. Cover and refirgerate dough for 1 to 2 hours.
  5. Scoop dough into 1 1/2 inch balls, about 2 tbsp. each.
  6. Roll each dough ball in powdered sugar before placing them on the cookie sheet.
  7. Bake at 375 degrees Fahrenheit for 12-14 minutes until set but not browned.
  8. When cool, roll cookies in powdered sugar again.
  9. Store in an air-tight container.
