Mandy's Andes Mint Chocolate Cookies

Chocolate Cookies with chocolate chips and Andes mint baking chips

Ingredients
  

  • 2 sticks salted butter one cup, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp salt
  • 1/2 cup cocoa powder Dutch processed recommended
  • 3.5 cups all-purpose flour
  • 1 cup chocolate chips
  • 1 bag Andes Mint Baking Pieces

Method
 

  1. Mix butter and sugars.
  2. Add eggs and mix until combined.
  3. Add baking powder, baking soda, salt, and vanilla and mix until combined.
  4. Add the cocoa powder and mix.
  5. Add 2 cups of the flour and mix together.
  6. On a clean surface, add the remaining one and a half cups of flour and dump the cookie dough on top.
  7. With clean hands mix the flour into the dough along with the chocolate chips.
  8. Add the mint baking chips and mix them in and roll the dough into a log.
  9. Slices evenly and place on an ungreased baking sheet.
  10. Bake in a 375 degree oven for 9 minutes.
  11. Move to a cooling rack. Enjoy!
  12. Cookies can be stored in an airtight container for up to a week.
