Press the sauté or sear button on the pressure cooker and wait for it to be HOT.
Add the olive oil, onion, and jalapeno if using.
Sauté for a minute or so then add the ground beef.
Cook until beef is browned and thoroughly cooked through. Drain off any excess grease.
Pour in the beef broth and de-glaze the pot.
Add corn, beans, Rotel, tomatoes, and seasonings.
Close the lid and make sure the valve is sealed. Cook on high pressure for 10 minutes.
Quick release the pressure and remove the lid once the pin has dropped and it is unlocked.
Serve with your choice of toppings or as is. We like cheese, sour cream, cilantro, avocado, and tortilla chips.
