Instant Pot Refried Beans PACKED with flavor. The use of bacon makes them rich and creamy and the spices take them to the next level. Perfect side dish for any Mexican meal!

- 1 lb. pinto beans sorted and rinsed
- 1/2 lb. bacon uncooked, chopped
- 1 small onion diced
- 1 jalapeno cored, seeded, minced
- 3 cloves garlic minced
- 6 cups broth or water
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. cumin
- 1 tsp. oregeno
- 1 tsp. chili powder
- 1 4 oz. can diced green chilis
Add chopped bacon to the liner of your Instant Pot.Press the saute button and cook until bacon is crispy.Remove bacon from pot with slotted spoon, leaving drippings in the pot.Add onion, jalapeno and garlic to the bacon drippings and saute a couple minutes until onions are translucent.Add broth or water and de-glaze the pot. Make sure to scrape any brown bits of bacon from the pot.Add rinsed beans, all seasonings and green chilis to the pot and stir.Close lid and insure valve is turned to sealing.Cook at high pressure for 50 minutes followed by a 20 minute natural release.When the Instant Pot read LO20 carefully turn the valve to venting to release any remaining pressure.When pin has dropped open the lid.Remove 1/2 to 1 cup of liquid.Blend the beans to desired consistency with immersion blender or carefully transfer to blender to blend in batches. Add liquid back to beans as desired until you reach your desired consistency. Serve warm and top with whatever you would like, including that beautiful crispy bacon.
