Grandma Norma's Chocolate Zucchini Cake

You would never know this cake has 2 cups of zucchini in it! It is so chocolatey, has a hint of cinnamon, and the texture is amazing. We love the brown sugar and chocolate chips on top.

Equipment

  • Stand mixer, optional
  • 9x13 pan

Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup oil
  • 1 3/4 cup sugar
  • 2 eggs beaten
  • 2 cups zucchini grated
  • 1 tsp vanilla
  • 1/2 cup sour milk or buttermilk
  • 4 Tbsp cocoa we like Dutch processed
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 1/2 cups flour

TOPPING

  • 3/4 cup brown sugar
  • 3/4 cup chocolate chips
  • 3/4 cup nuts chopped, optional

Instructions
 

  • Combine all ingredients and pour into a greased and floured 9x13 pan.
  • Sprinkle with brown sugar, chocolate chips, and nuts if using.
  • Bake at 350 degrees for 40-45 minutes until a toothpick comes out mostly clean.

Notes

You can also make this in a jelly roll pan and bake at 350 degrees for 25-3o minutes.
