Grandma Coco's Chile Relleno Casserole

Layers of mild chiles, cheese, and egg. So simple and delicious!

Ingredients
  

  • 12 eggs large
  • 3/4 cup milk
  • 1 tsp salt
  • 11 oz can whole green chiles
  • 7 oz can whole green chiles
  • 5 cups shredded cheddar cheese
  • 1 tbsp butter for the pan

Instructions
 

  • Preheat the oven to 350 degrees.
  • Butter a 9x13 inch baking dish.
  • Layer half of the chiles flat on the bottom of the dish. Make sure to remove any seeds to keep the flavor mild.
  • Sprinkle half of the shredded cheese over the chiles.
  • Layer the remaining chiles over the cheese.
  • Blend the eggs, milk, and salt together and pour over the top of the chiles and cheese.
  • Top the casserole with the remaining cheese.
  • Cover with foil and bake at 350 degrees for 40 minutes.
  • Remove foil and bake for an additional 5 minutes until lightly browned.
