Fresh Homemade Tzatziki Sauce

This fresh tzatziki recipe is rich and creamy. The fresh herbs and lemon make it bright and refreshing. It's delicious on pita, Gyros, as a dip for fresh veggies and more.

Ingredients
  

  • 1 ½ cups cucumber grated, 1 medium 8 oz cucumber
  • 1 cup full-fat plain Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 2 teaspoon fresh dill minced
  • 2 teaspoon fresh flat-leaf parsley minced
  • 2 cloves garlic minced
  • ½ teaspoon sea salt or to taste

Method
 

  1. Grate the cucumber into a bowl lined with a tea towel.
  2. Squeeze the juice from the cucumber and discard the juice or save for another use.
  3. Add one cup greek yogurt to a bowl.
  4. Top with olive oil, lemon juice, lemon zest, herbs, and salt then stir together.
  5. Add the drained cucumber and stir until combined.
  6. Cover and refrigerate until ready to serve.
