Method
- Grate the cucumber into a bowl lined with a tea towel.
- Squeeze the juice from the cucumber and discard the juice or save for another use.
- Add one cup greek yogurt to a bowl.
- Top with olive oil, lemon juice, lemon zest, herbs, and salt then stir together.
- Add the drained cucumber and stir until combined.
- Cover and refrigerate until ready to serve.
