Fresh Homemade Tzatziki Sauce
This fresh tzatziki recipe is rich and creamy. The fresh herbs and lemon make it bright and refreshing. It's delicious on pita, Gyros, as a dip for fresh veggies and more.

- 1 1/2 cups cucumber grated, 1 medium 8 oz cucumber
- 1 cup full-fat plain Greek yogurt
- 1 tbsp extra virgin olive oil
- 2 tsp lemon juice
- 1 tsp lemon zest
- 2 tsp fresh dill minced
- 2 tsp fresh flat-leaf parsley minced
- 2 cloves garlic minced
- 1/2 tsp sea salt or to taste
Grate the cucumber into a bowl lined with a tea towel.
Squeeze the juice from the cucumber and discard the juice or save for another use.
Add one cup greek yogurt to a bowl.
Top with olive oil, lemon juice, lemon zest, herbs, and salt then stir together.
Add the drained cucumber and stir until combined.
Cover and refrigerate until ready to serve.
