Blueberry Banana Steel Cut Oats in the Instant Pot
Toasty, nutty oats, fresh blueberries, and sweet bananas cooked together in the Instant Pot for a delcious, healthy, and filling breakfast.

- 1 tbsp coconut oil
- 1 cup steel cut oats
- 1 1/2 cups water
- 1 1/2 cups coconut milk or milk of your choice
- 6 oz blueberries fresh or frozen
- 1 tsp vanilla
- 1/2 tsp salt
- 1 ripe banana smashed
Press saute on the pressure cooker and allow it to get hot.
Add the coconut oil and steel cut oats and cook while stirring for a couple of minutes until lightly browned and toasted.
Press the cancel button and add the water, milk, blueberries, vanilla, and salt and stir together.
Top with the mashed banana and DO NOT STIR.
Cook on high pressure for 8 minutes and naturally release for 5 minutes.
Release remaining pressure, open the lid, and stir together.
Serve warm with any toppings you like.
Keep refrigerated for up to 5 days.
