Looking for a hearty queso dip for the big game or your next party? This Cowboy Queso is loaded with 3 kinds of cheese, ground beef, and lots of flavor! It is everything you want in a queso.

Ingredients for the Ultimate Cowboy Queso:
- 1/2 pound ground beef
- 1 tsp. cumin
- red pepper flakes, optional
- 1/2 red onion, chopped
- 1 can Rotel tomatoes and green chilis
- 16 oz. Velveeta cheese
- 8 oz. pepper jack cheese
- 8 oz. cream cheese
- 1 can black beans, drained and rinsed
- 1 can whole kernel corn, drained
- 1/4 cup cilantro

Good seasonings kick up the flavor in this Cowboy Queso.


That looks like a winning lineup to me!
Start by browning the ground beef in a pan. We used a cast iron pan that we were also able to serve the queso from later.
Once the ground beef is almost browned, add the diced red onion, cumin, and red pepper flakes.



Next, pour in the beef broth, this will help deglaze the pan, then stir everything together. Turn the burner to low and add the can of Rotel tomatoes and green chilis. Stir the Rotel in and allow it to simmer while you get the cheese ready.



SAY CHEESE!
Time to add THREE kinds of cheeses! You can throw it all in the pan as is and wait for it to melt, but we find at least cutting it into cubes helps it to melt more quickly. We cubed the pepperjack cheese and it still took some time to melt so I would recommend shredding it.



Add the cheese to the beef mixture and stir once in a while until completely melted.


BEANS AND CORN:
Once the cheese is melted and smooth it is time to add the beans and corn. We opened all three cans then poured them into a strainer in the sink and rinsed them all together. Make sure you let the liquid drain before adding the beans and corn to your Cowboy Queso. Continue to cook until the beans and corn are heated through.



EAT UP!
Garnish with cilantro and serve warm with tortilla chips, corn chips, or both. We hope this Ultimate Cowboy Queso is a hit for you!

- 8 oz. pepper jack cheese shredded
- 8 oz. cream cheese
- 1 can black beans drained and rinsed
- 1 can whole kernel corn drained
- 1/4 cup cilantro
Instructions
- Brown ground beef in a large pan over medium high heat.
- Once the beef is almost brown, add the diced onion, cumin, and red pepper flakes.
- Pour in the beef broth and deglaze the pan, then add the can of rotel.
- Turn the burner to low and allow it to simmer while you get the cheeses ready.
- Add the cheese to the meat mixture and stir occasionally until fully melted.
- Stir in the corn and black beans and continue to cook until heated through.
- Garnish with cilantro and serve warm with tortilla or corn chips.
