This MAGIC Coconut Cookie Bars recipe has been around for ages and it’s pretty clear why! It is made in the pan it bakes in, has just FIVE ingredients, and is so sweet, chewy, and addictive. You can mix things up by adding nuts, and M&Ms in different colors for special occasions or holidays, or keep them simple like we did. You really can’t go wrong with these yummy cookie bars!

- 1 sleeve of graham crackers, 9 full sheets
- 1 stick butter, half a cup
- 2 cups semi-sweet chocolate chips
- 2 cups flaked coconut
- 1 (14oz) can of Sweetened Condensed Milk
That’s it! You can totally add a cup of chopped nuts if you would like. We love these with pecans.
Let’s make a pan of Magic Coconut Cookie Bars:
Start by preheating the oven to 350 degrees Fahrenheit, or 325 degrees if using a glass pan. Place the stick of butter in the pan and place it in the oven to melt. We sliced our stick of butter first to make it melt more quickly. This takes just a couple of minutes so make sure to keep an eye on it so it doesn’t burn.
Next, take your package of graham crackers and smash them until crumbled. You can place them in a plastic bag and use a rolling pin, or carefully crumble them right in the original package like we did. Sprinkle the crumbs over the melted butter and use a fork to smash any big pieces.
Press the butter and graham cracker crumb mixture evenly into the bottom of the pan and sprinkle half the chocolate chips over the top.
Sprinkle the flaked coconut over the top of the chocolate chips. Then sprinkle the remaining chocolate chips over the top, and nuts if using. My little helper couldn’t keep his hands off the chocolate chips!
The last step for Magic Coconut Cookie Bars is to drizzle the sweetened condensed milk over the top. Yummy!
Bake for 25 minutes until the coconut is lightly browned. Cool completely before cutting.
Doesn’t that look amazing?! These are chewy, chocolatey, coconut heaven! We love them best served cold. If you would like a thicker cookie bar you can make them in a 9×9-inch pan and bake for 35 minutes.
I sure hope you try out these simple cookie bars! They are rich and are definitely ones you will want to share.
