Instant Pot Tasty Taco Soup

Our Instant Pot Tasty Taco Soup is a family favorite, it is full of flavor, and is so easy to throw together. The ingredients are all things we keep on hand so we can make it whenever we like.

The good stuff in our Instant Pot Tasty Taco Soup:

  • 1 Tbsp. extra virgin olive oil
  • 1 pound ground beef
  • Medium onion, chopped
  • (15.25 oz) can of corn
  • (16 oz) can of kidney beans, drained and rinsed
  • (10 oz) can of Rotel diced tomatoes and green chilis (cilantro lime is yummy if you can find it.)
  • 2 (14.5 oz) cans diced tomatoes
  • 1 packet dry ranch seasoning (2 Tbsp.)
  • 1 packet taco seasoning (2 Tbsp.)
  • 2 cups beef broth
  • (7 oz.) can diced green chilis
  • 1 jalapeno, finely diced, optional

Let’s get cookin’:

Press the sauté button on your Instant Pot or similar function on any pressure cooker you are using. Wait for it to read HOT and add the oil, onion,and jalapeno, if using. Sauté for a minute or two then add the ground beef. Cook until the beef is browned then drain off any extra fat. Next pour in the beef broth and de-glaze the pot. Make sure to use a wooden spoon to get any cooked bits off the bottom of the pot.

Everything else:

Now add the corn, beans, Rotel, tomatoes, and seasonings and give it all a good stir. This really is the easiest dinner to make!

UNDER PRESSURE:

Make sure that the inner silicone ring in the lid is in place correctly or it won’t come to pressure. Close the lid and ensure that the steam valve is closed. Cook on high pressure for 10 minutes. Once the time is up you can do a quick release and let the steam out. Once the steam is released, the pin will drop and the lid will unlock. Carefully open the lid away from you and take a big whiff of your Instant Pot Tasty Taco Soup!

Serve it up hot:

We like to top our Instant Pot Tasty Taco Soup with shredded cheese and a dollop of sour cream. We also like fresh cilantro and the kids think that tortilla chips are a must! Doesn’t that look delicious?!

Switch it up:

This recipe is so forgiving. Don’t have any corn, or don’t like it? Leave it out. Only have pinto or black beans? Those work great too! I love diced avocado on mine. What would you top yours with?

You can also use homemade taco and ranch seasonings if that is what you prefer. I have used ground sausage in place of the ground beef and it gives this soup a great flavor.

Ingredients
  

  • 1 tbps olive oil extra virgin
  • 1 lb. ground beef
  • 1 medium onion diced
  • 1 jalapeno diced, optional
  • 1 can corn drained, 15.25oz size
  • 1 can kidney beans drained and rinsed, 16oz size
  • 1 can Rotel diced tomatoes and green chilis 10oz size
  • 2 cans diced tomatoes 14.5oz size
  • 1 packet taco seasoning 2 Tbsp.
  • 1 packet dry ranch seasoning 2 Tbsp.
  • 2 cups beef broth we use Better Than Bouillon
  • 1 can diced green chilis 7oz. size

Instructions
 

  • Press the sauté or sear button on the pressure cooker and wait for it to be HOT.
  • Add the olive oil, onion, and jalapeno if using.
  • Sauté for a minute or so then add the ground beef.
  • Cook until beef is browned and thoroughly cooked through. Drain off any excess grease.
  • Pour in the beef broth and de-glaze the pot.
  • Add corn, beans, Rotel, tomatoes, and seasonings.
  • Close the lid and make sure the valve is sealed. Cook on high pressure for 10 minutes.
  • Quick release the pressure and remove the lid once the pin has dropped and it is unlocked.
  • Serve with your choice of toppings or as is. We like cheese, sour cream, cilantro, avocado, and tortilla chips.
