Grandma Mildred’s Blueberry Salad

Grandma Mildred’s Blueberry Salad is another super yummy recipe from her cookbook. It has just a few ingredients and is simple to put together.

Here’s what you need to make Grandma Mildred’s Blueberry Salad:

  • 1 large box blackberry jello
  • 2 cups boiling water
  • 1 large can crushed pineapple, undrained
  • 1 can blueberry pie filling
  • 8 oz. cream cheese, softened
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 9×13 or smaller pan

I couldn’t find blackberry jello so I used black cherry flavor and it is delicious. This time when I made it I also couldn’t find a big box of jello in either flavor, so I subbed 2 small boxes instead. I’m not sure what size pan this is but it is smaller than a 9×13. You can definitely make this in a 9×13 pan, but it won’t be as thick as mine.

I added 2 cups of water in my Pyrex measuring cup and microwaved it until hot. You can do this on the stove top if you prefer. Next I added the jello powder right to the measuring cup and whisked until it was dissolved.

Pour the Jello into the pan and stir in the undrained pineapple and blueberry pie filling.

Refrigerate for several hours until set.

In a bowl, combine the softened cream cheese and sugar and beat until smooth. Then add the sour cream and vanilla and mix. I find that mixing the cream cheese with the sugar first helps to make it smooth. And softened cream cheese is super important if you don’t want lumps. 🙂

I have made lots of desserts with cream cheese topping, but had never had one with sour cream as well. It is light and refreshing and not quite as sweet as others I’ve had. Go ahead and spread that yummy topping over the set jello.

It’s as simple as that! Cover and refrigerate until ready to serve.

Looks beautiful garnished with some fresh blueberries and a few mint leaves. I think this would also be PERFECT for your Independence Day celebrations. It would look great with a strawberry and blueberry flag on top like our Old Glory Fruit Pizza.

Ingredients
  

  • 1 box blackberry jello large, or 2 small
  • 2 cups water boiling
  • 1 can blueberry pie filling large
  • 1 can crushed pineapple large, undrained
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • chopped nuts, mint leaves, fresh blueberries for garnish, if desired

Instructions
 

  • Dissolve the jello in the water.
  • Add the pineapple and the pie filling.
  • Pour into a 9×13 or smaller pan and let set up in the refrigerator.
  • Cream together the cream cheese, sour cream, sugar, and vanilla.
  • Spread over the top of the set jello.
  • Chopped nuts can be sprinkled over this, if desired.
  • Refrigerate until ready to serve.
