Grandma Coco’s Fudgy Frosted Brownies are our family favorite! My Mom, lovingly called Grandma Coco, makes these for the kids and grandkids often. She has even been known to make them multiple days in a row because they disappear so fast!
What you will need to make Grandma Coco’s Fudgy Frosted Brownies:
- 2 sticks butter (one cup)
- 1/2 cup cocoa, we recommend Dutch-processed
- 2 cups sugar
- 4 eggs, large or extra large
- 2 tsp vanilla
- 1 tsp salt
- 2 cups flour
For the frosting you will need:
- 6 Tbsp. butter
- dash of salt
- 1/4 cup cocoa
- 1-2 Tbsp. milk
- 1 tsp. vanilla
- 3 cups powdered sugar
Let’s get baking:
Grandma Coco mixes her brownies right in a pan. You can melt the butter and add to a stand mixer if you prefer, but we like to do it all in one pan because it means fewer dishes to wash!
Add 2 sticks of butter to a pan on the stove and heat until butter is melted then remove from heat.
Stir in the Dutch cocoa.
FUN FACT:
Regular cocoa is delicious and flavorful but is somewhat acidic. Dutch-processed cocoa is treated with an alkali to neutralize the acidity which smooths and mellows the cocoa’s flavor and makes the color darker. We think it makes a big difference!
Now it’s time to add the sugar and mix well.
Next you will add the vanilla and salt.
Beat the eggs first then add them to the brownie batter and mix well.
Finally add the flour and mix well. The batter will be nice and thick which is what you want.
Pour the brownie batter into a greased 9×13 pan.
Bake at 350 degrees Fahrenheit for 30 minutes.
While your brownies are baking it’s time to whip up some yummy chocolate frosting. Start by creaming together the softened butter and cocoa.
Add the salt, vanilla, and milk and mix well. Now add the powdered sugar slowly until you reach your desired consistency. If you add too much powdered sugar and the frosting seems dry, you can add a little more milk to smooth it out.
I like to whip mine until it’s lighter and fluffy. Once the brownies have cooled you can go ahead and frost them.
Spread it out.
Slice them up and serve!
They are amazing just like this, but they are also wonderful with a scoop of vanilla ice cream on top.
Lincoln could NOT wait to get his fingers in it and I can’t say I blame him!
The little boys love when Grandma Coco makes brownies because they get to lick the frosting off the beaters and make a giant mess!
ONE MORE TIP:
Grandma Coco usually makes her brownies in a jelly roll pan and does 1 1/2 times this recipe and still bakes it for 30 minutes at 350 and it is perfect for a big crowd!
We really hope Grandma Coco’s Fudgy Frosted Brownies become a favorite for your family as well! Grandma Coco is pretty amazing so you’ll definitely want to check out these other yummy recipes of hers!
