What the heck is frog eye salad???
I grew up enjoying this sweet, fruity salad at family parties. It is actually a pasta salad made with Acini Di Pepe pasta which are little tiny balls and look like frog eyes. I have heard of this salad being made with pistachio pudding which makes the salad green and gives it more of a “froggy” vibe. I might have to try that next time. I love pistachio!
I should probably mention that this makes a BIG bowl of salad. This recipe is easily halved if you aren’t taking it to a party and don’t want to eat it every day for a week. 😉
TO MAKE THIS FROG EYE SALAD YOU WILL NEED:
- 2 (20 oz) cans crushed pineapple, juice reserved
- 2 small cans mandarin oranges, juice reserved
- 1 box instant vanilla pudding (big box. 5.1 oz)
- 16 oz. box Acini De Pepe
- 1 bag of miniature marshmallows, colored or plain
- 16 oz. cool whip
TO MAKE THE FROG EYE SALAD:
Cook pasta according to package, then drain and rinse with cool water. You will need to use a mesh strainer for this because the pasta is so teeny! If you don’t have a mesh strainer you could use a tea towel in a regular colander so the pasta doesn’t go through the holes.
Next grab a large bowl and drain the canned fruit into the bowl.
Now dump the pudding powder in the juice.
Whisk it real good. 😉
Now you can add your cooled and drained pasta.
THE GOOD STUFF:
Go ahead and dump in the pineapple, mandarin oranges and marshmallows.
Give it all a good stir.
Time to add the cool whip and mix it all together. YUM!

- Drain juice from canned fruit into a large bowl.
- Add pudding mix to the juice in the bowl and mix.
- Add the pasta to the pudding mixture.
- Add the pineapple, mandarin oranges and marshmallows and mix.
- Fold in the cool whip and chill until time to serve.

I love this salad. I tried it with lemon pudding and it was awesome. Such a good salad for a crowd.
