Fresh Homemade Tzatziki Sauce That is Simple and Delicious

Making Fresh Homemade Tzatziki Sauce is fairly simple and so delicious. It is wonderful as a dip for fresh veggies or pita bread or chips. We love to use it as a spread on our Grilled Greek Chicken Gyros.

FRESH INGREDIENTS:

  • 1 1/2 cups grated cucumber, 1 medium 8 oz. cucumber
  • 1 cup full-fat plain Greek Yogurt
  • 1 tbsp extra virgin olive oil
  • 2 tsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp fresh dill
  • 2 tsp fresh flat-leaf parsley
  • 2 cloves garlic, minced
  • 1/2 tsp sea salt, to taste

Simple enough, right? Let’s make some! The first thing we will do is grate the cucumber. Grate the entire cucumber into a bowl lined with a tea towel. We like to use English cucumbers because they have thin skin. If your cucumber has a very thick skin you may want to peel it first.

SQUEEZE:

Once your cucumber is grated you will want to squeeze the juice from it. If you don’t remove some of the liquid you will end up with a runny tzatziki sauce and it may separate.

Squeeze the cucumber through the towel over the bowl. You will be surprised by how much liquid comes out! We saved our cucumber juice and used it to make a delicious watermelon cucumber smoothie. It was so good! If you don’t have a tea towel you can use a fine-mesh strainer and just press the cucumber inside it to release the juice.

GREEK YOGURT:

We love to use quality greek yogurt for our Fresh Homemade Tzatziki Sauce. It is the base for this recipe and will make a difference in the end result. Authentic Tzatziki Sauce often uses goat or sheep yogurt, but we just use regular, full-fat greek yogurt as it is easier to find. The full-fat yogurt will make a creamy sauce. PUT IT ALL TOGETHER:

Add one cup of plain greek yogurt to a bowl. Add the olive oil and lemon juice and zest.

Top with your fresh chopped herbs, garlic, and salt then stir it all together until combined.

Cover and refrigerate until ready to serve. It is so bright and refreshing! What will your serve it with?

Ingredients
  

  • 1 1/2 cups cucumber grated, 1 medium 8 oz cucumber
  • 1 cup full-fat plain Greek yogurt
  • 1 tbsp extra virgin olive oil
  • 2 tsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp fresh dill minced
  • 2 tsp fresh flat-leaf parsley minced
  • 2 cloves garlic minced
  • 1/2 tsp sea salt or to taste

Instructions
 

  • Grate the cucumber into a bowl lined with a tea towel.
  • Squeeze the juice from the cucumber and discard the juice or save for another use.
  • Add one cup greek yogurt to a bowl.
  • Top with olive oil, lemon juice, lemon zest, herbs, and salt then stir together.
  • Add the drained cucumber and stir until combined.
  • Cover and refrigerate until ready to serve.
