Ingredients for Rotisserie Chicken Salad with Cream Cheese and Apples:
- 4 cups rotisserie chicken, chopped
- 3/4 cup mayonnaise
- 8 oz cream cheese, softened
- 3 green onions, finely diced
- 1/2 cup diced celery
- 1/2 cup diced honeycrisp or granny smith apples
- 1/3 cup craisins
- 2 tsp lemon juice, divided
- 1 tsp Dijon mustard
- 1/2 tsp salt (I use seasoned salt)
- 1/2 tsp black pepper
- 1 tsp dill seasoning, optional, (I use dash o’ dill)
Let’s whip some up!
Prep the apples by chopping and placing them in a bowl of cold water with 1 tsp of the lemon juice, this will help prevent them from browning. They only need to soak for a few minutes, then add to a strainer and allow to dry.
I like to leave the peel on the apples because it adds color to the chicken salad. I love using a mixture of Honeycrisp apples, which have bright red skin, and Granny Smith apples with their bright green skin. You can always cut off the peel if that’s what you prefer.
You’ll also want to chop your celery and chicken.
To a bowl, add the softened cream cheese, mayonnaise, Dijon mustard, dill seasoning, and salt and pepper and whisk together until smooth. Next, fold in the chopped chicken.
Note:
I used a dill seasoning called “Dash ‘O Dill” that you can buy in bulk. It has dehydrated onion, dill, parsley, caraway, sesame seeds, lemon peel, orange peel, dehydrated garlic, citric acid, and freeze-dried whole lemon. You can see it in the photo below. Regular dill seasoning is great in this recipe, but dash o’ dill is super yummy.

Time to stir it all together! You can serve this on croissants or a bed of lettuce, or eat it will some pita chips. You can refrigerate it before serving to allow the flavors to meld together, but I prefer it fresh just like this!

Instructions
- Add the chopped apples to a bowl of cold water with 1 tsp of lemon juice and allow to soak for a few minutes to prevent browning.
- Place the softened cream cheese, mayonnaise, Dijon mustard, remaining lemon juice, salt, pepper, and dill seasoning to a bowl and whisk until smooth.
- Add the chopped chicken and stir together with the sauce.
- Drain the apples and allow to dry or pat dry, you don't want to water down your sauce.
- Add the apples, craisins, celery, and green onion to the chicken mixture and fold together.
- Serve immediately on a bed of lettuce, croissant, or serve with pita chips.
- Refrigerate leftovers up to 3 days.
