MINI MONSTER PANCAKES with COCONUT SYRUP:
These Mini Monster Pancakes with Coconut Syrup are so heavenly!!! A friend of mine makes German pancakes about once a week for dinner for her family and always raves about them. She said the coconut syrup is the best part. I got the recipe from her and it is called Monster Pancakes because the kids think it grows like a monster when it bakes. I decided to make mine in muffin tins instead of a big pan so we will call them Mini Monster Pancakes. 🙂
HOW TO MAKE THE MINI MONSTER PANCAKES:
Start by preheating the oven to 375 degrees. Next add the eggs, flour, milk, vanilla, sugar and salt to your blender and blend well. You can also just mix in bowl if you would like. Just make sure there are no lumps of flour.
Cut the butter into even pieces and put in the bottom of two muffin pans.
Place the pan in the hot oven for just a minute or two to melt the butter.
Now pour the batter evenly into each muffin cup. They should be about half way full. If you want them bigger just use 18 of the 24 muffin cups and fill them a little fuller. 🙂
Bake at 375 degrees for 13-15 minutes until edges are golden brown. Mine were perfect at 15 minutes. Look at those little monsters. 😉
NOW TO MAKE THE COCONUT SYRUP:
You will need:
1 cup butter
1 cup sugar
1/2 cup buttermilk
1/2 tsp. baking soda
1/2 tsp. coconut flavoring
If you don’t have buttermilk you can always add lemon juice, vinegar or cream of tartar to your milk to make buttermilk. I added 1 Tbsp. of lemon juice to the half cup of milk for mine.
LET’S MAKE IT:
Put all ingredients in a pot and slowly bring to a boil while stirring. Make sure your pot is big because it will grow. Boil for just a minute or so and remove from heat.

Oh, and just in case you thought my life was “picture perfect,” here is a real life picture of Lincoln destroying things while I made these little beauties. If you look closely you will see the juice everywhere! It was also all the way down the cupboards and on the floor. And he was throwing the apple…cause it’s a ball, obviously. Good thing I love him!

- 6 eggs

- ½ stick butter
