GRANDMA COCO:
Once upon a time, my Mom had a getting to know you survey sent home from church. I saw it sitting on her counter and decided to help her fill it out. One of the questions asked what her nickname was. The only nicknames she really has are “Mom” and “Grandma,” so I thought I’d come up with a new nickname for her. Her name is Colleen so I decided Coco was the perfect name for her and thought I was so funny because it totally does not fit her personality. 🙂 So, of course I taught my kids to call her Grandma Coco. I think she secretly loves it.
My Mom is the best.
FAMOUS:
Here is the recipe for Grandma Coco’s Chocolate Chip Cookies. Everyone LOVES her cookies and she gets asked for the recipe all the time. I get asked for it every time I make them as well even if they aren’t QUITE as good as when she makes them.
GRANDMA COCO’S CHOCOLATE CHIP COOKIES:
Start with two sticks of butter at room temperature, or softened. Add one cup of brown sugar and one cup of white sugar and cream together. Grandma Coco always just mixes hers in a bowl with a spoon, but I usually bust out the mixer for mine.
Next add two eggs.
Mix again.
Now it’s time for a teaspoon each of baking soda, baking powder, vanilla and salt. I don’t always add the salt, mostly because I use salted butter a lot of the time.
Mix that and add the first 2 cups of flour.
After mixing in the first 2 cups of flour I like to add the chocolate chips so they “stick” better.
GHIRARDELLI:
My FAVORITE chocolate chips are Ghirardelli milk chocolate. NOM! Grandma Coco uses semi-sweet and they are delicious too…because, chocolate.
Oh, how I love cookie dough!
Mix in the 3rd cup of flour and sprinkle 4th cup onto a clean surface. Dump dough onto the flour.
ROLLING:
Mix in the flour by hand and roll dough into a log. NOTE: depending on moisture, size of eggs and humidity and such, I don’t ALWAYS use the entire four cups of flour. Start by adding in 1/2 of the 4th cup of flour and you can add more if needed. The dough shouldn’t be dry, but not too sticky either.
SLICE:
Now grab a knife and slice into somewhat even slices. 😉
Bake on an un-greased cookie sheet at 375 degrees for 9 minutes.
Warm and delicious…
