New potatoes and peas with cream sauce are a traditional meal for our family at Easter. They have just a few simple ingredients and come together quickly in the Instant Pot.
Ingredients
3 lbs new potatoes, or small red potatoes, rinsed and quartered
3 cups of fresh or frozen peas
1 cup water
3 Tbsp. butter
3 Tbsp. diced onion
3 Tbsp. flour
1½ cups milk
salt and pepper to taste.
Instructions
Rinse and quarter potatoes
Pour cup of water into the bottom of the Instant Pot liner and add the trivet
Place potatoes on the trivet in the pot
Close Instant Pot lid and turn valve to sealing
Set for 5 minutes on High Pressure
When time is up do a quick release and open the lid when pin has dropped
Carefully dump potatoes into a colander in the sink to drain
Remove trivet from liner
Return liner to Instant Pot and press the saute button
Add butter and onions and cook for 2 to 3 minutes while stirring
Add flour and stir until combined
Pour in milk and whisk until smooth
Add peas and stir
Add potatoes and stir
Salt and pepper to taste
Serve warm
