My kids cannot get enough of these Chocolate Chip Banana Monkey Muffins! We make them any time we get some good, ripe bananas, which isn’t too often because my kids gobble up bananas before they can get brown enough. Sometimes I write banana bread on the banana peels so they won’t eat them. 🙂
Ingredients for Chocolate Chip Banana Monkey Muffins:
- 1 cup white sugar
- 3 tablespoons sour cream
- 1/2 cup butter, softened
- 3 ripe bananas
- 2 eggs
- 1 teaspoon baking soda
- 2 teaspoons vanilla
- 2 cups flour
- 1 cup chocolate chips
These will be great no matter what type of vanilla and chocolate chips you use, but they will be incredible if you use Ghirardelli chocolate chips and Mexican vanilla. YUM!
How do you like your bananas?
In our family, my husband likes his bananas GREEN! I like them once they are perfectly yellow but have no brown spots. My daughter, Emma, loves them when they have a few spots and are a little sweeter. This is why we end up eating all the bananas! Someone likes them at all stages of ripeness. The more ripe your bananas are, the more sweet the muffins will be.
Let’s whip ’em up!
Add the sugar, bananas, sour cream, and softened butter to a mixing bowl.
Cream the ingredients together and add the vanilla, baking soda, and egg.
Stir until just mixed and add the flour.
Once the flour is incorporated it’s time for the CHOCOLATE! Mix in the chocolate chips, but save a few to place on top if you would like.
Scoop batter into greased muffin tins. This recipe makes about 18 muffins.
Sometimes we like to sprinkle the tops with cinnamon sugar before baking.
Bake at 350 degrees Fahrenheit for 18-20 minutes until just golden brown.
These are so yummy! Expect them to disappear quickly.
If your family is like mine and gobbles bananas up before you get a chance to bake with them, buy some they are already over ripe! I didn’t know that was a thing for the longest time, but it is, and they are usually cheaper too.
