There are lots of different variations of little cookie nests for spring all over the internet, but these Cadbury Mini Eggs Nutella Macaroon Nests (say that five times fast!) combine some of my favorite things! The mini eggs are basically a food group of their own, coconut macaroons are one of my faves, and Nutella! Need I say more?
Grandma Coco’s Coconut Macaroons are the base for these yummy cookie nests. The only difference is we used vanilla instead of the lemon extract for these. Either one would be yummy though. They are topped with a dollop of Nutella and a few Cadbury Mini Eggs. Easy peasy and so dang cute!
What you will need to make our Cadbury Mini Eggs Nutalla Macaroon Nests:
- 5 cups flake coconut
- 1 cup sugar
- ½ tsp salt
- 6 Tbsp flour
- 6 egg whites (unbeaten)
- 1 tsp vanilla extract
- 1 bag of Cadbury Mini Eggs
- 1 cup of Nutella
LET’S MAKE ‘THEM:
Add the coconut, sugar, salt, flour, egg whites, and vanilla to a bowl. We love that this recipe allows you to just dump it all in at once and stir.
Stir ingredients together until well blended.
It will be sticky…
Drop by heaping tablespoons onto a greased cookie sheet. I used my cookie scoop.
Flatten the cookies slightly. I left the edges of my cookie a little messier than usual so they would be more nest like.
TIME TO BAKE:
Bake at 325 degrees for 20 minutes. Remove from cookie sheet immediately. I lined my cookie sheet with parchment paper and sprayed it with cooking spray. This made it really easy to just pull the parchment off the cookie sheet onto my cooling rack. They should be slightly browned on the bottom. Using the back of a small scoop, or your finger, make a small indentation in the center of each macaroon.
Allow to cool before topping with Nutella.
CHOCOLATE:
You can use a piping bag, plastic bag as I did, or even just a spoon to get the Nutella on the cookies. Sandwich bags don’t seem to be strong enough because the Nutella is so thick so I used a quart size freezer bag. Just fill the bag with Nutella and snip the corner off. Add a teaspoon or two to the center of each cookie.
Now all that is left is to top them with the Cadbury Mini Eggs and gobble them up!
These little nests are not only adorable but they are seriously yummy!
Cadbury Mini Eggs Nutella Macaroon Nests
Ingredients
- 5 cups flake coconut
- 1 cup sugar
- 6 egg whites unbeaten
- 1/2 tsp salt
- 6 tbsp flour
- 1 tsp vanilla
- 1 cup Nutella
- 1 bag Cadbury Mini Eggs
Instructions
- Add coconut, sugar, egg whites, salt, flour, and vanilla to a bowl and mix until well blended.
- Drop by heaping tablespoons onto a greased cookie sheet and flatten slightly.
- Bake at 325 degrees for 20 minutes.
- Remove from pan to cooling rack immediately.
- When cool, top with a teaspoon or two of Nutella and a few Cadbury Mini Eggs
