What the heck is frog eye salad??? I grew up enjoying this sweet, fruity salad at family parties. It is actually a pasta salad made with Acini Di Pepe pasta which are little tiny balls and look like frog eyes. I have heard of this salad being made with pistachio pudding which makes the salad green and gives it more of a “froggy” vibe! I might have to try that next time. I love pistachio!
My husband was so excited when I surprised him with this POMEGRANATE PEAR AND CANDIED PECAN SALAD for lunch one day. We both love salads with fresh, yummy ingredients and it’s always fun to try a new combination of flavors. This salad has such great textures and flavors. The fruit and candied pecans are sweet and are balanced by the salty feta cheese and the tang from the orange poppy seed vinaigrette.
Here is the simple recipe for our POMEGRANATE PEAR and CANDIED PECAN SALAD as well as the orange vinaigrette to smother it in. This salad is packed with yummy pomegranate arils, red pears, candied pecans, feta cheese and mandarin oranges on top of a bed of spinach and leafy greens. We thought that it looked beautiful and would be great to take to a holiday party.
This vinaigrette is so delicious. It’s the perfect amount of sweet and tangy to top any salad or fruit. It comes together quickly in the blender and is amazing with our Pomegranate Pear Salad with Candied Pecans.
