What the heck is frog eye salad??? I grew up enjoying this sweet, fruity salad at family parties. It is actually a pasta salad made with Acini Di Pepe pasta which are little tiny balls and look like frog eyes. I have heard of this salad being made with pistachio pudding which makes the salad green and gives it more of a “froggy” vibe! I might have to try that next time. I love pistachio!
MINI MONSTER PANCAKES with COCONUT SYRUP:
These Mini Monster Pancakes with Coconut Syrup are so heavenly!!! A friend of mine makes German pancakes about once a week for dinner for her family and always raves about them. She said the coconut syrup is the best part. I got the recipe from her and it is called Monster Pancakes because the kids think it grows like a monster when it bakes. I decided to make mine in muffin tins instead of a big pan so we will call them Mini Monster Pancakes. 🙂
Instant Pot ZUPPA TOSCANA SOUP:
We love Zuppa Toscana Soup from The Olive Garden but live no where near an Olive Garden restaurant. Now we can have this copy-cat version at home in no time! I served this when my parents were visiting one time and my Dad was surprised that he liked it so much because he’s not a fan of the Olive Garden version, he said it’s too spicy. I used regular sausage rather than the hot because I knew my kids would complain about the spiciness. It’s so good! If you want a little heat, then definitely use the hot sausage.
Once upon a time, my Mom had a getting to know you survey sent home from church. I saw it sitting on her counter and decided to help her fill it out. One of the questions asked what her nickname was. The only nicknames she really has are “Mom” and “Grandma,” so I thought I’d come up with a new nickname for her. Her name is Colleen so I decided Coco was the perfect name for her and thought I was so funny because it totally does not fit her personality. 🙂 So, of course I taught my kids to call her Grandma Coco. I think she secretly loves it.

CRANBERRY ORANGE FRENCH TOAST:
We used our RUSTIC NO-KNEAD CRANBERRY ORANGE BREAD to make this amazing CRANBERRY ORANGE FRENCH TOAST with CINNAMON SYRUP. I LOVE french toast but I cannot stand when it is soggy. This bread is rustic and hearty and holds up very well. The fresh tang of the orange zest and cranberries pairs so beautifully with the sweet cinnamon syrup. My husband and I had this for lunch today and he could not quit talking about how great it was. My one year old screamed every time he needed another bite. I’m tellin’ ya, this is a must try.

THE INSTANT POT ENTERS MY LIFE:
Several years ago while visiting my parents, I watched my Dad use his Instant Pot for boiled eggs. They were in and out in no time and they PEELED SO WELL! I’m talking, the peel came right off with no effort and they were perfectly cooked! The electric pressure cooker was a foreign concept to me and I was totally mesmerized by this magical contraption. After I was home from my visit to my parents house a package arrived on my doorstep from Amazon. It was an Instant Pot! I know, I am totally spoiled rotten. My Dad is the most giving person I know and always gifts me things that he knows I will love. I used the Instant Pot for eggs and rice and loved the results, but didn’t do much else with it for quite a while. I changed my ways though and have now made everything from pasta to cheesecake in it!
There are so many things I love about the Instant Pot, but one of my favorite things is that I can cook dry beans in it without soaking! Dry beans are so CHEAP and they are packed full of fiber and other good stuff. Chili is a favorite at our house so I knew I needed to adapt my recipe for the Instant Pot. My kids are always happy when I make chili for dinner and they will eat it for days with no complaint. Mom win for sure! They LOVE my INSTANT POT CHILI with dry beans.
